A simple and delicious recipe for barbecue steak - this can also be cooked in a hot griddle pan if the weather isn't too good.
Buy the largest aged rump steak you can afford, and let it come to room temperature before you begin.
Rub with Olive Oil and season well with black pepper. When you are ready to grill, sprinkle the steak with a little flaked sea salt and place on the hottest part of the grill for 2 minutes without touching it.
Turn and grill for a further 2 minutes for medium rare. Remove from the heat and rest for a good 8-10 minutes. Slice at an angle and serve with our own piquant Chimichurri Sauce - available in the Smokehouse Shop.
