This delicious, rich gratin recipe with white wine, mustard and tarragon is a great way to use up leftover turkey or chicken. It's also very easy to prepare.
Serve with an unoaked Chenin blanc from South Africa, or a light, soft red such as a Ventoux Rouge Beaujolais.
