Fresh selected loins of pork are trimmed then cured in a brine with juniper, bay leaves, pepper corns and coriander. Cold smoked over oak and beech then hot smoked until perfectly cooked. Wonderful in a salad with apple and pecan nuts or as an open sandwich with crunchy coleslaw.
Approximate shelf life of 14 days.
