This ancient Romanian recipe has been adapted to suit modern tastes by the Americans where it has become a modern classic. Briskets of beef are brined then rubbed with spices including cracked coriander and black pepper, then slowly cold smoked in our kilns before being steamed. For the perfect deli sandwich just add Thousand Island dressing, Swiss cheese, gherkins and good rye bread.
